Summer wheat berries with vegetables…I wonder…Can you call it a salad? Well, it may be considered as a warm salad, though in fact it is a wonderful full meal.
Firstly, it is VERY delicious! Properly prepared berries will maintain their shape and contribute to an interesting texture. Vegetables will add some volume, freshness, bright colors and taste diversity.
Vegetables and wheat berries are what make this dish very healthy. It’s easy and quick to make from seasonal vegetables, which is time and cost-saving, and vitamin-rich.

COOK WHEAT BERRIESSoak the wheat berries in 2 as much water as berries and place in the fridge overnight. Drain the soaking water. Bring to a boil wheat berries in 4 times as much water (salted) as berries. Reduce to simmer and cook until tender. Save the liquid – you can later use it for soups, as it’s full of minerals, but for this recipe you’ll need only 1 cup. Wheat berries can also be prepared ahead and kept refrigerated for a few days. |

COOK BROCCOLICook the broccoli in salted water until done. Use a slotted spoon to remove to a bowl full of iced water. As soon as the broccoli cools (30 sec), remove and set aside. |

FRY ZUCCHINICut the zucchini into quarter-circles or cubes and fry until golden brown in oil over high heat. Do not add salt. Transfer to a plate covered with paper towel to absorb any excess oil. |

PREPARE OTHER INGREDIENTSCut the onion into small cubes. Heat 2 tbsp olive oil in a pan over low/medium heat. Add the onion and cook until transparent and soft for about 10 min. |

ASSEMBLEAdd the wheat berries and broccoli. Season with salt and pepper to your taste. Combine and cook for about 1 min to let all the ingredients are warmed through. If the tomatoes didn’t release enough juices - add 1 cup berry water to make the dish richer. Plate up, garnish each portion with chopped chives. |
