I promised you to tell about the second idol of summer terraces in Vienna – Hugo cocktail. It is a quite young cocktail (it is believed to be created in 2005) of Italian origin (South Tirol). Its freshness and subtle flavor made it a favorite of summer parties. I would say, it is the second popular cocktail in Vienna after Aperol Spitz. The main ingredients of Hugo cocktail are sparkling wine and elderflower syrup (a Vienna recipe). There is a version, that initially bee balm syrup was used, and later replaced with elderflower syrup because it was more popular. Once I bought bee balm syrup on purpose to try it out in Hugo cocktail. I like a popular version with elderflower syrup better.
I associate Hugo cocktail with tidal bore sounds, a light breeze and warm soft sand…I may want to go to the seaside 🙂

So, Hugo is a summer cocktail, meaning that its ingredients should be cold. Place the sparkling mineral water and wine in the fridge beforehand. It is desirable that you chill the glasses by placing them in the fridge as well or by adding some ice cubes in the beginning and let them stand to chill. After the glasses have been chilled, remove the ice cubes together with the melting water. |

Cut the lime in half. Cut a slice for garnishing. Squeeze the other half and save the juice. |

Place the mint leaves in the chilled glasses. Slightly mash them with a fork. |

Add the lime juice and elderflower syrup. Slightly mix. |

Add the sparkling wine, then the sparkling mineral water or soda. |

Add a few ice cubes. |

Garnish with the lime slice, and if, desired, with a few mint leaves and cucumber slices. Serve immediately. Have wonderful summer evenings! |
