1 kg of Plums Prune plum
1 Red onion
1 Chili fresh
200 ml of Apple vinegar
400 g of Brown sugar
1 stick Cinnamon
5 Cardamom whole
1 Star anis
2tbsp. of Mustard seeds yellow
2 Bay leaf

Chutney is an Indian sweet condiment. It’s usually made from fruits, onion, and chili and served to main dishes to highlight their flavor. 

It was brought to Britain by Indian immigrants and now it’s popular in many European countries. 

This plum chutney recipe is from my favorite restaurant in Copenhagen. It’s amazing! Both the restaurant and chutney 🙂 Plum chutney is great to serve with pates and cheeses, stewed meat, and curry. It somewhat resembles pickled plums but is a bit spicier and has a different aroma.

Preheat the oven to 125 degrees.

Cut the plums in half, remove the pits. Finely dice the onion and chili pepper.
Arrange the plums in a baking tray. Add the onion and chili. Top with sugar, vinegar, and thee spices.

Bake for 1 h at 125 degrees. Plums will release juices and be stewing without boiling.
Increase the temperature to 150 degrees and keep baking for another 2 h. It’ll be simmering, that’s fine. Reduce the temperature if it starts boiling.
Carefully stir a few times through the baking.
The ready mixture should be thick.

Divide into clean jars and seal. Keep in the fridge for a few months.
Serve with pates, cheeses, sandwiches, stewed meat, curry, etc.
