Directions
Austria’s famous for its smoked foods (sausages, rolls, chicken legs, and ham) and there are thousands of delicious variations of each. Hunting isn’t prohibited here and is regulated by strict rules, so Austrians smoke not only pork and beef but also wild boar, deer, roe deer, duck. Farmers from all over Austria participate in fairs that take place in Vienna, and I just love them. I never leave without some smoked duck breast, it’s very tender, fragrant and properly cooked here. Holding this treasure in my hands I already know that I’m preparing my favorite smoked duck salad.
The salad in the photo is made according to this recipe, with some mango and bramble, but I always vary ingredients. The only thing you should know is that a smoked duck breast can be paired with:
- Sour-sweet juicy fruit and/or berry with tender pulp to neutralize the salty and smoked taste of duck. Mango, peach, nectarine, raspberry, strawberry, blueberry, blackberry, bramble etc.
- Lettuce for a neutral fresh taste.
- Dressing: olive oil and balsamic vinegar.
This is my perfect combination, experiment with tastes to find yours!
You can always add goat cheese or feta.

prepare saladPeel and slice the mango. Slice the smoked duck breast. In each serving plate, place a handful of lettuce, mango slices, bramble, and some crashed goat cheese or feta on top. Season with salt, pepper, olive oil and balsamic vinegar. Serve. |
