Ingredients

Adjust Servings:
500 g of Cooked beetroot
1 Apple
1 Red onion Small onion
2 tbsp. of Horseradish
Dressing:
2 tbsp. of Raspberry vinegar Or red wine vinegar 5%
1 tbsp. of Honey
1.5 tbsp. of Whole grain mustard
1 tbsp. of Extra Virgin olive oil
to taste Salt
to taste Grounded black pepper

This simple but tasty and healthy Scandinavian dish goes very well with gravlax or baked meat/poultry. The taste of the appetizer is sour and sweet, and it’s the freshest.

I serve a slice of seed bread, salted salmon gravlax and this beet tartar for breakfast. It’s a great flavor, an energy boost to start the day off well and 100% healthy!

Cut the boiled beets into small cubes of 5mm. Clean the seeds from the apple leaving the skin and cut into the same cubes.
Dice the onion into very small cubes.

Mix the vegetables, add finely grated horseradish, olive oil, honey, mustard and 1 tbsp of vinegar. Salt it to taste, add black pepper, mix it well and taste the mixture. Now add more vinegar to taste. Tartar should be sweet and sour, with a pronounced sourness. Add the vinegar gradually because mustard also contains varying amounts of vinegar.
Leave it to marinate for at least 15 minutes.
Serve it with salted salmon gravlax, baked meat, or fish.
