1 cup Red lentils
4 cups Water hot
2 tbsp Vegetable oil
1 tbsp Ghee или растительное масло
1 pcs Onion or vegetable oil
1/2 bundle Coriander leaves
Spices:
1 tbsp Caraway seeds
2 cloves Garlic medium-sized
3 cm Ginger fresh
1-2 tsp Salt to taste
1-3 pcs Chili fresh to taste
1/2 tsp Turmeric powder
Additional:
4-5 pcs Curry leaves
1/2 tsp Chilli powder hot
1/2 tsp Garam masala
1/2 tsp Ground coriander
2 Tomato fresh medium-sized tomatoes
for garnish Coriander leaves

Dal, Indian lentil soup, is one of the most popular Indian dishes. Made from different kinds of legumes, such as lentils, black gram, chickpeas, mung beans, pigeon peas, it’s packed with protein. Dal is called different names depending on what legume it’s made from.

Let’s start with quick and easy red lentil dal, probably, the most popular dal in Europe.

It takes about 30 min to make. Making red lentil dal is a pure delight! The aromas from the pot will drive you crazy!

I divided the ingredients into a few categories: Basic+Spices are essential for making an Indian dish. Additional are optional, however, I always add tomatoes. 

As I said, there are tons of recipes for dal, and you can find versions with different additional ingredients. Choose whatever you think best. 

Don’t forget about chili peppers – use as much as you think you need. Remember that chili peppers vary by spiciness depending on their size and type, so be careful.

Rinse the lentils with cold water a few times.

Dice the onion and tomatoes. Chop the garlic. Finely grate or chop the ginger.
Prepare the chilis: remove the seeds and white membrane. Chop finely.
Finely chop the coriander leaves. Save a few for garnish.
Transfer the ground spices to a small bowl.

Heat some butter or ghee (or vegetable oil for vegan version) in a pot. Add the onion and cook at medium/high heat until soft and slightly golden brown.

Add the coriander seeds and curry leaves. Cook together for a few minutes until the coriander releases its aroma.

Add the garlic and ginger. Cook together for 30-60 sec until they release their flavors.

Add the chili and the ground spices. Cook together for 30 sec.

Add the tomatoes, salt, and coriander leaves. Cook for a few minutes until the tomatoes are soft.

Add the lentils. Combine and cook for 2-3 min.

Add the hot water. Increase the heat and bring to a boil. Then reduce to simmer and cook for about 15 min. To achieve the proper consistency of dal, lentils should be mushy. So you can mash them in the end, if needed.
Try, season with salt, if necessary.

To serve, add some ghee and garnish with coriander leaves.
