This wonderful cake is classically made without flour, but we’ll make it by adding coconut oil and milk. The apples give the dessert a fresh note, with slight sourness and moistness. We won’t need baking powder since the cake will turn out fluffy. Separately beaten yolks and whites will do all the work on the fluffiness.⁠

As you already know, gluten-free baking has its specific features. One of them is that we don’t get a crispy golden brown crust. But that’s the only thing this dough will lack compared to a genuine Italian pizza from the oven! Everything else will be! The dough is delicious, soft and fluffy, making a great pizza!⁠

P.S. Please remember that working with gluten-free dough is not the same as working with conventional dough. Gluten-free dough is not so elastic and you can’t stretch it. Therefore, we will roll it out and form the edges by hand.⁠

2 cups of Salsa mexicana⁠
8 Egg(s)⁠

2 tbsp. of Ghee⁠
2 tbsp. of Coriander leaves ⁠

Preparation:⁠
Preheat ghee oil in a pan. Mix eggs with salt until smooth and pour them into the frying pan. Cook eggs over medium heat, stirring continuously. When the eggs have slightly cooked but not all the way through, remove the pan off the heat and add hot Salsa Mexicana to the eggs. Give them a stir, garnish with chopped cilantro and serve.⁠
