Perhaps the combination of tuna and carrots in waffles sounds unusual to you, to say the least 🙂. However, these waffles are not only delicious but also packed with protein. They have a soft texture and a flavor similar to fish patties. The carrots add a nice touch of sweetness, tenderness, and a vibrant color. It’s an excellent choice for breakfast or a snack.

You should definitely give it a try! Even if your first thought after seeing the title was, ‘Hmmm…’🙂

Steps

1
Done

Grate the carrots using a fine grater. It's essential to grate them finely! Since the waffles cook quickly, larger carrot pieces won't have enough time to cook through.

2
Done

Next, open the can of tuna and drain the liquid. In a bowl, use a fork to break the tuna into small pieces. Then, combine the finely grated carrots, egg, corn flour, baking powder, and coconut milk, seasoning with salt and black pepper to taste. Mix until the batter reaches a medium consistency. If it's too thick, simply add a little more coconut milk; if it's too thin, sprinkle in a bit more corn flour.

3
Done

Preheat the waffle maker and cook the waffles until they turn a lovely golden brown. For the best taste, serve these waffles right away while they are warm.
