Grate the carrots using a fine grater. It's essential to grate them finely! Since the waffles cook quickly, larger carrot pieces won't have enough time to cook through. |

Next, open the can of tuna and drain the liquid. In a bowl, use a fork to break the tuna into small pieces. Then, combine the finely grated carrots, egg, corn flour, baking powder, and coconut milk, seasoning with salt and black pepper to taste. Mix until the batter reaches a medium consistency. If it's too thick, simply add a little more coconut milk; if it's too thin, sprinkle in a bit more corn flour. |
