Directions
This dish brings back childhood memories and is a great way to make a nutritionally sound dessert. For making the rice cake, use yesterday’s boiled cooled rice. Whole-grain rice is the best, but white rice works just as well. Once it cools, some of the rice starch will turn into resistant starch, providing excellent nourishment for the beneficial bacteria in your intestines, known as probiotics. In addition to natural sweetness, dried fruits add minerals and vitamins to the dish, while eggs add protein. I do not add sugar to this cake.
The best way to serve the rice cake is as a chilled dessert with coconut yogurt.

This dish is made with yesterday's boiled and cooled rice. You can also boil and refrigerate the rice. |

To rehydrate dried fruits, pour hot water over them and allow them to soak for 10 minutes. After that, rinse them thoroughly under running water, squeeze out excess liquid and pat dry with a paper towel. Cut the larger dried fruits into smaller cubes. |

Preheat the oven to 170 degrees Celsius. |

Whisk the eggs just until smooth. Combine dried fruits, nuts, rice, and eggs. Grease the baking dish with oil, pour the mixture in, and bake at 170 degrees Celsius for 40 to 50 minutes. If the top starts to brown too much, cover it with baking paper. |

Make sure the rice cake is nice and thick in the middle. Once it's done baking, take it out of the oven and let it cool down in the dish for 10 minutes. Then, transfer it to a rack to cool completely before placing it in the fridge to chill. Your rice cake is now ready to enjoy! |
