Directions
We fell in love with this salad in Dubai, where they serve it in Moroccan restaurants. It’s the perfect summer dish, which is fresh, beautiful, healthy and delicious!
But what makes a cucumber and tomato salad a Moroccan salad? Well, there are a few things to be sure to follow:
- The cucumbers, tomatoes and red onions are diced finely. It is the dicing that gives the salad its distinctive texture. I use a dicer as it’s faster, or you can cut them with a knife.
- The diced vegetables are placed in a sieve and sprinkled with a little bit of salt to let the excess moisture drain off for about 1 minute. Otherwise, the salad will float in its juice and will be more like a summer soup:)
- The salad must have a noticeable amount of mint. Preferably use a fresh mint, but if not, then a dried one. The salad should have a distinct minty flavor.
- Use lots of fresh fragrant herbs for your taste, such as parsley, dill and green onions.
- The salad is dressed with lemon juice, salt, black pepper, cumin and olive oil. I added for myself also lemon zest and a little honey in case the tomatoes were not sweet enough.

Dice the tomatoes and cucumbers finely and place them in a sieve over a bowl. Sprinkle them with a little bit of salt, mix well and let them stand for about 10 minutes. During this time, the excess moisture will drain out. This juice you can drink or throw away. |

Add the herbs and onions to the tomatoes and cucumbers. Mix and dress the salad to taste. Serve at once! |
