This cake has a soft, elastic texture with a hint of Amaretto flavor from the marzipan. It has thin layers of apples or pears at the bottom, topped with chopped nuts, giving you a delightful mix of three textures that blend beautifully. You can easily make it with a food processor and bake it at a low temperature of 160 degrees Celsius.

In the photo, the cake has a brown hue from the coconut sugar. If you prefer white sugar, the cake will be a light beige color. You can choose to use either apples or pears in the cake. You can also include any nuts you desire, like hazelnuts, walnuts, almonds, or pecans.

This recipe is meant for a baking dish that is 18 to 20 cm in size.

Preheat your oven to 160 degrees Celsius. Line the bottom of an 18 to 20 cm baking dish with baking paper, then coat the sides and bottom with coconut oil (right on the paper).

Cut the apples in half, remove the seeds and leave the skin on. Cut each half into thin, about 2 mm thick slices, and arrange them in layers at the bottom of the baking dish.

Put the sugar and marzipan in the food processor bowl. Blend it until it looks like coarse sand. Then, add the room-temperature coconut butter and vanilla seeds, blending until the mixture is smooth. Then, add the eggs and mix again, until the mixture is light and fluffy. Finally, mix in the rice flour, salt, and tapioca starch until everything is smooth.

Spread the thick batter evenly over the apples, smooth out the surface and top it off with a generous handful of coarsely chopped nuts. Feel free to choose any nuts that you love!

Bake the cake at 160 degrees Celsius for about an hour. If it starts to brown too much on top, just cover it with some foil. Once it's done, take it out of the oven and let it cool in the baking dish.
