Ingredients

Adjust Servings:
200 g of Black radish
200 g of Kohlrabi
50 g of Kohlrabi greens Young leaves
200 g of Cucumber
1/2 bunch of Parsley leaves
1/2 bunch of Dill
1/2 bunch of Chives
Dressing:
125 g of Coconut yogurt
1/2 tsp. of Dijon mustard
to taste Lemon juice
1/2 tsp. of Honey Optionally
1 tbsp. of Extra Virgin olive oil
to taste Salt
to taste Grounded black pepper

Kohlrabi is my favorite cruciferous vegetable. It’s healthy, it tastes good and it’s fresh. That’s great! One of the winter salad options is a combination of black or other radishes with kohlrabi and cucumber. These vegetables go well together, complementing each other.

To dress the salad, we’ll use coconut yogurt with mustard, olive oil, lemon juice and honey.

Radish and kohlrabi peel and grate on a coarse grater. Cut young leaves of kohlrabi and green onions finely.
Slice cucumber with peel into thin slices or half rings. Chop the greens finely.
Mix all ingredients of the dressing until smooth. Then season it with salt, lemon juice and pepper to your taste.
Mix all the ingredients of the salad in a bowl. Then taste and adjust the dressing, if necessary.
It's ready. Let's serve!
