Directions
Here’s a dairy-free version of classic Italian pesto. I love pesto and always add it to pasta, so I wasn’t ready to say goodbye to it just because it contains parmesan. This recipe uses the same ingredients as the classic one: fresh basil, sweety nuts, garlic, lemon juice, and some nutritional yeast to replace parmesan and give this pesto a cheesy note and some additional vitamins!

Place the basil in cold water. Wash carefully and shake off any excess water. Remove the leaves from the stem (discard it or dry for soups). Peel and coarsely chop the garlic. |

In a food processor, add the basil leaves, garlic, pine nuts, nutritional yeast, olive oil, and salt. Pulse until smooth. Taste, add salt and lemon juice. |

Transfer to a glass jar, drizzle a little olive oil over the top and seal closed to keep in the fridge for several weeks. |
