Directions
This super crunchy kohlrabi, apple, and fennel salad is just right for summer! It originates from Israel, where they know how to cope with the heatwave.
Kohlrabi, apple, and fennel are very flavorful and refreshing and balance one another out perfectly in this salad. For the dressing, we will use coconut yogurt and fresh mint leaves for maximum freshness!
If you didn’t get to get fennel, use celery or young carrot instead!
You can add spinach leaves, too, if you want.

Pit the apples. Cut each into 4 wedges. Cut each wedge into 3-5 mm thick slices. Cut the fennel into 3-4 mm slices. Drizzle with some lemon juice, mix. |

Peel the kohlrabi and cut like the apples. Add to the apples and fennel. |

For the dressing, mix together coconut yogurt and mayonnaise with a whisk. Finely chop the fresh mint leaves, add to the dressing. Add dried mint, salt, white pepper, lemon juice, and olive oil. Mix well. |
