Directions
These are simple but beautiful and delicious gluten-free cookies with dark chocolate chips. It’s great for cooking together with kids.
Crunchy on the edges and soft inside – these cookies will make you happy!
The recipe uses all-purpose gluten-free flour which you can make yourself with the help of this recipe: Best “all-purpose” gluten-free flour mix.

Chop 50 g of chocolate into medium-sized pieces, other 50 g into large pieces. |

Combine the dry ingredients (except for coconut sugar) with a whisk. |

Beat the softened margarine or coconut oil with a mixer until creamy. Then carefully mix in the egg and 1 tbsp of oil. |

Add the dry ingredients to the wet ones. Mix with a mixer. With a spatula, fold in 50 g of medium-sized chocolate pieces. |

Preheat the oven to 180 degrees. |

Bake for 5 min. The cookies will spread but be soft on top. Take them out, place the large chocolate pieces on top, pressing slightly. Return to the oven and cook until ready for 10-15 min. |

Take the cookies out. Let them cool down. They will still be somewhat soft - no worries, they will harden as they cool. Serve when completely cooled. |
