2 Cucumber
100 ml of Coconut yogurt
3 sprigs of Mint fresh
3 sprigs of Basil leaves
2 tbsp. of Pistachios
1 tsp. of Balsamic vinegar

I posted a blackberry and cucumber salad before, but I’ve updated it since. Now I add more blackberry, fewer cucumbers, and dress with coconut yogurt. It’s even tastier now. So fresh, summery, healthy, and unique…I love it!

Toast the pistachios in a dry skillet. Set aside to cool down. Dice the cucumber. Tear the mint and basil leaves and add them to the cucumber. Add the pistachios saving some for garnish. Dress with the yogurt, balsamic vinegar, and salt, mix. Add the blackberry (save a few for garnish) and mix carefully.
Garnish with the remaining blackberries, pistachios, and mint leaves. Serve right away.
