These cookies are amazing and very unique. They aren’t crispy but sort with a very tender texture.
It’s easy, healthy and light. Besides, instead of sugar, this recipe uses agave syrup.

Explanations:
Almond flour is much finer than ground almond. You can buy it online or in stores in a dietetic department. You can also make it yourself by grinding raw peeled almond in a coffee grinder or food processor.
I chose grapeseed oil for its neutral taste but you are free to use coconut or any other plant-based oil to your taste.
P.S. For dairy-free version use dairy-free dark chocolate.

Preheat the oven to 175 degrees. |

Coarsely chop the chocolate. |

Bake for around 10 min. The cookies will get golden and slightly brown on edges. |

Take out and let cool in the sheet. They are still soft, so don’t touch them. They will get more solid as they cool, then you can transfer than to a wire rack. |
