Directions
These are classic gluten-free crepes with grated apples mixed into the batter. The apple brings a nice balance of sweetness and tartness, giving the crepes a lovely golden brown color. The key is to squeeze the apples before mixing them in otherwise the crepes will fall apart. We also include apple juice for extra flavor.
You can follow the same idea by adding pear, zucchini, or pumpkin to your crepes.

Mix all the ingredients together in a blender, leaving out the apples and blend until you achieve a smooth consistency. |

Grate the apples, keeping the skins on, using either a fine or coarse grater and then squeeze out the juice. Combine 100 ml of the juice along with the squeezed grated apples into the crepe batter. If needed, adjust the consistency with a bit of water. Cook the crepes as you normally would, greasing the pan with a thin layer of olive oil or ghee. |
