Ingredients

1 Avocado
1/2 clove of Garlic
1 tsp. of Dijon mustard
2 tbsp. of Lemon juice More or less to taste
to taste Salt
3 tbsp. of Extra Virgin olive oil
1 tbsp. of Water More or less to taste

It’s a great substitution for regular mayonnaise and just a cool sauce to use in sandwiches, rolls, canapé, salads, and a dip, too.

Try it with shrimp or Olivier salad, you’ll love it!

Peel and pit the avocado. Pulse all the ingredients except water into a paste in a blender. If the consistency is too thick, add cold water one tablespoon at a time. Taste and season with salt and lemon juice to taste.
Keep in a closed container in a fridge for a few days.
