1 Zucchini
2 Egg(s)
2 tbsp. of Buckwheat flakes Or rolled oats
1 Chives
1/2 bunch of Parsley leaves

It’s a great summer dish. It’s easy to make and is perfect for breakfast, lunch, or dinner. The kids will definitely love such a meatloaf!

Preheat the oven to 180 degrees Celsius.

Chop the greens finely. Grate the zucchini, season with salt and set aside to drain for 15 minutes. Then wrap it in a towel and squeeze out the excess moisture well.

Next, place all ingredients in a bowl and mix until uniform with a spoon or your hand.
Cover the oblong baking mold with baking paper. Then place the meatloaf in the baking mold, smooth it out and brush its surface with olive oil.
Bake it in the oven for about 1 hour. The temperature inside the meatloaf should be above 74 degrees Celsius.
Serve it warm or cold.
