Steps

Cut the salmon into large cubes. Then, chop the vegetables into large chunks suitable for skewering: onions into thick slices, sweet peppers into large squares and halve the cherry tomatoes. |

Place the salmon and onions in a bowl and add soy sauce and garlic. Mix well to ensure that all the pieces are coated with the sauce. If needed, add more soy sauce. Leave them to marinate for 15 minutes. |

Preheat the oven to 200 degrees Celsius. |

Take a roasting pan with sides that are easy to use for skewers so that the fish will brown evenly on all sides. If you don't have a suitable pan, you can use a baking sheet covered in baking paper instead. If you're using bamboo skewers, soak them in cold water for at least 30 minutes before you start baking so they don't burn. |

Thread the salmon pieces alternately with different vegetables onto the skewers. Place the skewers onto a roasting pan or a baking sheet. Let them bake in the oven for about 15 minutes. During this time, the fish cooks and turns golden while vegetables will also get a nice touch of browning on the edges. Voila! The salmon is ready. |
