Today we’re making radicchio! They call it a salad but it’s a relative of chicory 🙂 Radicchio is very healthy because it’s high in vitamins, potassium, phosphorus and iron. Also, mind you, the bright color tells you it has a lot of antioxidants!
Raw radicchio has a bitter taste with some nutty tinge. Someone will say, “Ew, it’s bitter!” However, don’t rush and let’s cook it right. It’s not for nothing that the Italians adore radicchio!
Different radicchio varieties have different levels of bitterness. The oblong ones are less bitter than the round ones! Radicchio can be added raw to salads or you can soak the leaves in cold water for a couple of hours to reduce the bitterness.
With heat processing, (roasting, boiling or baking) radicchio becomes sweet and the bitterness is not noticeable at all. It tastes great!
Today we will cook radicchio the way they do it in northern Italy where it is very popular, which is baked in the oven. So, it will either be a main dish or a side dish to go with the meat. I eat it as a main dish 🙂

Preheat the oven to 200 degrees Celsius. |

Cut the radicchio in half lengthwise, remove the top leaves if they are wilted, incise the core longitudinally several times at the base. Rinse the radicchio well in cold water. |

Pour the oil into a baking dish or cast-iron pan. Place the radicchio and turn it several times to coat all sides with oil. Now season well with salt and pepper on all sides. |

Place the radicchio with the cut side down in the baking dish and put it in the preheated oven. Bake it for about 10 minutes. Then take it out, turn it upside down, and bake for another 7 minutes. Then take it out again, turn it upside down and bake for another 10 minutes. |

Serve radicchio hot or at room temperature. Radicchio can be baked in advance and then reheated before serving. |
