Directions
Guacamole is a word that comes from the Aztec language and means ‘avocado sauce’. The Mexican-born dish is now popular all over the world. The only ingredients in the rigorous traditional form are avocado, lime juice, onion, chile and cilantro. In modern cooking, both in Mexico and outside its borders, tomatoes, onions, basil, parsley, capers and various other additives and spices are added to guacamole to taste.
Today, we are making a close to the classic guacamole recipe with tomatoes and pickled onions. It’s a delicious, fresh and gorgeous dish!

PICKLED ONIONSIn a small bowl, mix sugar, vinegar and water until sugar is dissolved. Cut onions into thin half-rings and place them in the marinade. Soak the onions in the marinade for 15 to 30 minutes. Then, remove them and drain the extra liquid. You can do this in advance, then remove the onions and keep them in a tightly closed container in the fridge without the marinate. |

GUACAMOLEChop the cilantro greens medium. Cut the tomatoes in half. Then, remove the juice and seeds and dice the tomatoes finely. Next, dice the pickled onions finely. Remove the membranes and seeds from the Serrano peppers (chiles) and dice them finely. |

Peel the avocados from their skin and pit. Mash the pulp with a fork to the desired consistency or knead it in a mortar. Then add all the remaining ingredients, season with salt and lime juice to taste and mix well. You can also add a little olive oil. Serve right away. |
