4 heaps mixed greens

4 pcs fresh mushrooms, medium-sized

1 heap walnuts

50 g soft goat cheese

Dressing:

1 tsp onion, finely chopped

1/4 tsp garlic, finely chopped

1 tsp mustard
-
1 tbsp white wine (or fruit) vinegar, 5%
-
1 tbsp honey
-
3-4 tbsp oil

Pinch of salt

Freshly ground black pepper
Directions
An easy to make yet very rich in taste mushroom & goat cheese salad. Crispy greens and fresh snow white mushrooms, fried walnuts and flavorsome goat cheese – all complemented with sour-sweet dressing with a secret! Absolutely delicious, easy and quick!
I suggest you prepare this light salad for dinner.

Wash and dry the greens. Fry and then coarsely dry the walnuts. Cut the mushrooms intol thin slices. |

Preparing the dressing. With a mortar and pestle, mash the onion and garlic until a fine paste forms. In a bowl, add all the ingredients including the onion and garlic paste and mix until well-combined with a whisk. The dressing should have a pretty intense sweet-sour taste. Add some mustard or vinegar to taste, if desired. |

Place the greens in a large salad bowl. Place the mushroom slices and walnuts on top. Break the goat cheese with hands and place on top. |

Warm up half of the dressing in the microwave oven until hot but not boiling. Pour over the salad and stir carefully. The goat cheese will melt and enhance the dressing - this is a wonderful secret of this salad! |
