Directions
Zhug is a hot sauce from Yemen that is also very popular in Israel. It is sometimes called oriental pesto, although it is closer to adjika in spiciness. Zhug is the perfect way to keep greens fresh and add spice to any dish. It is well kept in the fridge and is always ready to refresh any dish.
I always have this sauce in my fridge. I add it to borscht and tahini, serve it in stews or on eggs, steak, or chops.
I highly recommend it!

Prepare herbs as follows, take only the leaves from the parsley, take the leaves and delicate twigs from the coriander. Cut the chili in half, clean the seeds out and membranes (optional), cut into large pieces. Peel the garlic. |

Grind all ingredients in a meat grinder, add salt and 4/5 olive oil. Mix it. Place in a clean glass jar, pour the remaining oil on the surface, close tightly and keep in the fridge for up to one month. |
