Marinade Jerk
125 г Onion

You may have already heard of the Jerk marinade or spice mix used in the Caribbean islands. Like everything ingenious, this marinade originally had more of a practical purpose than a culinary one, the meat coated in Jerk marinade was stored longer. Now all dishes with “Jerk” in the name are using one or another kind of Jerk marinade or a mixture of dry spices in the recipe, the recipe of which, naturally, each Caribbean hostess has their own way. What all Jerk marinades have in common is the presence of fresh chili, scotch bonnet and allspice, the other ingredients may vary. The Jerk marinade makes the meat tender, juicy and “sunny”.  Let’s make chicken baked in this marinade. You will love it!

Peel the onion and cut it into large pieces. Peel the ginger and cut it into slices. Use ground allspice or grind the whole allspice in a mortar. Tear off the thyme leaves from their sprigs and throw the sprigs away.

Put all the ingredients of the marinade in a food processor and grind into a liquid homogeneous puree

Coat the chicken well with marinade on all sides and inside, then leave it in the refrigerator to marinate for several hours, or better overnight. Turn it over several times.

In the original recipe, the chicken is grilled.
If you are cooking it at home, there are the following options:
1. Bake the chicken in a baking sleeve according to the instructions for it. In my case, I place a chicken of 1.4 kg in a hot oven at 200 degrees Celsius and it cooks for about 1 hour and 15 minutes.
2. Either cut out the backbone of the chicken and put it on a baking tray like in the Butterflied Roasted Chicken recipe and bake it at 180 degrees for about 1.5 hours.
3. Or simply bake it in the oven as a whole.
