2 Chicken breast
to taste Salt
to taste Grounded black pepper
for frying Vegetable oil
vegetables:
2 handfuls of Spinach
2 handfuls of Salad mix
1 Cucumber

1/2 tsp. of Salt
1/3 tsp. of Grounded black pepper

This chicken breast and peach salad with honey and mustard dressing makes a great dinner or lunch. It’s simple, healthy, colorful, and delicious!

Seasonal vegetables and fruit, warm and crispy chicken breasts, and freshly made sour-sweet honey-mustard dressing are what make this salad a success.

If you make this salad in summer, peaches are just perfect for it! In winter you can use mango instead.

Cut the cucumbers into semi-circles. Cut the tomatoes into large cubes. Peel and pit the peaches and cut them into medium-sized cubes. Cut the spinach and lettuce leaves into strips. Finely chop the parsley leaves.
Arrange the spinach and lettuce on a serving plate. Place the cucumbers, tomatoes and peaches on top on the sides leaving space for chicken in the center.

Combine the ingredients for dressing in a small jar. Close it tightly and shake well to emulsify dressing. Taste and season to taste.

Rub the chicken breasts with salt and pepper on both sides. Cook them in oil until crispy and golden brown. Cut into 1.5 cm wide strips pieces and place on top in the center of salad. Give the dressing a shake again and pour over salad. Garnish with the parsley leaves. Serve.
