Pour the vinegar in a 1 l jar.
Carefully rinse the elderflowers under running water. Then remove the flowers from their stalks and add to the vinegar. Seal the jar and leave in a cool place for 7 days. When ready, strain the vinegar to discard the blossoms. Keep in the refrigerator for up to a year.
