Recently I’ve found even a simpler recipe for zucchini fritters with chickpea flour which works both as flour and eggs. It’s super delicious!

Coarsely grate the zucchinis in a large bowl. Add some salt and let stand for 10 min to let the juices release. |

Squeeze handfuls of zucchini tightly to remove as much extra water as possible. Discard the liquid. |

Heat some oil in a pan over medium heat. Scoop tablespoons of batter for each fritter, flattening with a spatula to about 5 mm thick. Cook until golden brown on each side. |
