Cashew milk is a great plant-based alternative. It has a sweet and gentle flavor, making it perfect for coffee and various recipes, especially pureed soups and desserts. You can adjust the richness of the milk by varying the amount of cashews. This recipe calls for about 150 grams of cashews per liter of water.

Cashew milk lasts about three days in the fridge. Just give it a good shake before using it.

Soak cashews in three times their volume of water, sprinkle in some salt, and let them sit for a minimum of 4 hours or overnight in the fridge.
After that, drain the water and give the cashews a good rinse. Next, place them in a blender, add 1 liter of fresh water and blend on high for about 2 minutes. Finally, strain the mixture through multiple layers of gauze. That's it!
