125 g fresh raspberries

125 ml white wine (or apple cider) vinegar of high quality

Raspberry vinegar is a magic thing. It’s incredibly flavorsome and delicious having a perfect ruby color. It is used in various meat and fish dishes, salads (for instance, my favorite salad with smoked goose breasts) and desserts. There are two ways of making raspberry vinegar at home – an easy and a quick one is to macerating raspberries in wine vinegar, and a time-consuming, but proper one is making vinegar from raspberries by fermenting them with honey or sugar.
We are going to start with the easy method described in this recipe. The other method will follow soon.
Make raspberry vinegar in raspberry season and you will be delighted!

Wash and dry the raspberries. Place into a glass jar and mash with a spoon. |

Add the wine vinegar and mix. |

Screw the lid onto the jar. Place the jar in a dark cool place for 14 days. Personally I placed in the fridge. |

Give the jar a shake every so often within 10 days to mix the raspberry-vinegar mixture. |

After 10 days, strain the vinegar though a cheese cloth. The strained liquid will have a rich raspberry color and a slightly sour and rich raspberry taste. How to serve: Use for salad dressings, sauces and marinades, desserts. How to keep: Keep refrigerated. |
