200 g of fine corn flour

200 g of wheat flour

2 eggs

200 g of sour cream or yoghurt

100 ml of oil

200 ml of milk

1 tsp of salt

1 tsp of sugar

1 tsp of baking powder (or baking soda)

250 g of white cheese – feta or bryndza
Directions
Kristina, my Serbian-born friend shared this recipe with me. Every time I visited Belgrade, I would eat this cornbread served with a bowl of soup with great pleasure. And I liked it so much that I asked Kristina to share her recipe with me. She told me that that was proja – a traditional Serbian dish, usually cooked by Serbian housewives.
I highly recommend you to try cooking proja yourself. These pretty yellow buns with such a pleasant flavor are perfect for a dinner table.
Besides, it is so easy to cook – just mix and bake!

Crumble or cut the cheese (approx. 2x2 mm pieces) |

Mix together sieved flour, salt, sugar and leaven. |

Whisk eggs until smooth, add sour cream or yoghurt. Mix. Add milk and mix again. |

Add the egg-and-milk mixture to the flour mixture. Mix until smooth. Add oil and mix again. |

The consistence of the batter should be quite thick. |

Add the cheese to the batter. Mix carefully with a spoon. |

Pour the batter into the muffin pan, but don't overfill since it will raise in the oven.

Bake at 200 degrees Celsius for about 30 min. Its surface must get golden brown. How to serve: Serve warm as a side dish to soup, meat or vegetable dishes. How to keep: Can be kept up to 3 days without losing its taste. Just let it cool, then cover it with a plastic wrap and leave it on the table at room temperature. Warm it up before serving. |
