Matbucha is a spicy tomato and chili sauce. It needs to be made in large quantities beforehand and frozen in portions. Then, the cooking of other dishes with it is very fast and the result is gorgeous.

I highly recommend trying this option of baking fish! The sauce is delicious, rich and bright. It perfectly complements the neutral white fish meat.

As the sauce is premade, the cooking time for the dish is 25 minutes at most and 20 minutes of that time, it will just be baking in the oven. It’s the perfect after-work dinner or quick lunch!

Preheat the oven to 240 or 250 degrees Celsius. What you need is a very hot oven, so we're replicating the oven conditions.

Rinse the fish and blot it with a paper towel on the outside and inside. Then make oblique cuts on both sides of the fish and rub it with salt and pepper on the outside and inside.

Spread an even, thin layer of Matbucha sauce on the bottom of the baking dish. Put the fish on top, drizzle with olive oil and bake it in a very hot oven.
Baking will take no more than 20 minutes, depending on the oven. When the fish is visibly browned, usually after 10 to 15 minutes, turn the fish over and bake until the skin on the other side is browned, which will take another 5 to 10 minutes.

Take the done fish out and serve hot right in the baking dish. Place both the fish and the sauce on the plate when serving.
