This millet and berry mousse is your opportunity to get to love millet even if you haven’t been a big fan of it 🙂 It’s also a great idea for a healthy and delicious breakfast for both kids and adults. 

It has everything the perfect recipe has: silky texture, vibrant color and taste, natural ingredients, and it’s also very quick to make.

Rinse the millet with boiling water. Add it to the skillet together with the coconut milk and water and cook until the millet is soft (15-20 min).
Set aside to cool down.
You can replace the coconut milk, you can use 1,5 cup of any plant-based milk.

Choose darker types of berries for the mousse to be more vibrant in color. Use blueberry, black currants, blackberry (which I used in the photo). Place the berries in a small saucepan with honey or sugar and place it over low heat to let them release juices and get softer.
Remove from heat, set aside to cool. Process in a food processor and then rub it through the sieve to get the smooth sauce.

In a blender, add the millet, berry sauce, and yogurt. Blend until smooth. Try to taste, add honey or sugar if needed.
Serve cooled, garnish with the berry sauce.
