Directions
This is an interesting one. Even though cucumbers are the only ingredient in this salad, a peculiar dressing makes it so fresh, sour-sweet, nutty, multi-faceted and just amazing, really.
This cucumber and cashew salad perfectly pairs with grilled dishes and is just a great summer dinner idea.

Cut the cucumbers into thin semi-circles. Blend the cashews in a food processor or coarsely chop. Finely dice the onion. Coarsely chop the coriander leaves. |

If you use red onion, combine the cucumber with onion, add lime juice, and set aside. If you use chives, add then in the end. |

Heat 2 tbsp of oil in a pan, add the cumin and cook it over low heat until flavors are released. Add the chopped cashews and cook until golden brown. |

Add the cashew mixture to the cucumbers, combine. Add sugar, salt, some oil, chives, chili flakes, and coriander leaves. Try, add more salt and sugar, if needed. |
