Roasted pumpkin with feta, sesame and pumpkin seeds is a super easy recipe to make. In the meantime, it provides a very well-balanced and piquant taste. Roasted orange-colored pumpkin offers sweetness and “pumpkinness”, feta – freshness and a milky taste with a slight sour note, roasted sesame and pumpkin seeds make this dish crispy and interesting.

Peel and dice the pumpkin into 2x2 cm cubes. Preheat the oven to 180-190 degrees Celsius.

Lay the pumpkin onto baking pan lined with foil. Drizzle with olive oil, sprinkle with some salt and mix the pumpkin with your hands to thoroughly distribute oil.

Cook in the oven until the pumpkin is soft and slightly brown on edges. The time of cooking depends on the pumpkin type and varies from 30 to 50 min.

Remove from the oven and toss with sesame and pumpkin seeds. Place on the upper rack of the oven and cook for another 4-5 min.

You may also drizzle with feta at stage 4 or when the pumpkin is done. I prefer adding feta in the very and for a fresher taste. Try both variants.

Remove from the oven, drizzle with honey and feta (if not added before).
