This brownie recipe is simply delightful, with its incredibly smooth and creamy texture. To achieve this, it is baked quickly and then cooled to room temperature before being refrigerated for a few hours. Once chilled, these brownies will simply melt in your mouth!

In addition to the crumbly texture, these brownies offer a moderately sweet yet wonderfully chocolatey flavor.

Tips:

This recipe yields a small cake, so I bake it in a rectangular baking pan. If you prefer to bake the brownies in a traditional 20×20 square baking pan, simply double the batter and slightly extend the baking time.

To achieve a smooth and creamy texture, remove the brownies from the oven as soon as they start to firm up around the edges (no more than 1 cm) while the center is still slightly undercooked. Allow them to cool to room temperature in the pan and then refrigerate them for a few hours while still in the pan.  Serve the brownies chilled. When overbaked, the brownies will look like a chocolate cupcake or muffin.

Adding some crushed nuts to the texture really makes it special. To achieve this, you can either use coarse nut flour or if you have fine and fat-free almond flour, mix it with ground nuts. Although the recipe calls for almond flour, any nut flour will do. 

For the best flavor, use ripe bananas, either one large or two small ones.

Preheat the oven to 180 degrees Celsius. It's crucial to have a properly heated oven for this recipe since the baking time is short.

Melt the chocolate and let it cool down.

Combine the dry ingredients until evenly mixed and sift if there are any lumps.

Using a fork, mash the banana into a smooth puree. Beat the eggs with a fork until well blended, then add them to the banana puree. Also, add the cooled melted chocolate and olive oil to the mixture. Stir everything together until it is thoroughly combined.

Combine the dry ingredients with the wet ingredients and mix until smooth. Transfer the batter to a baking pan and put it in the oven that has been preheated (!). Bake for 13 minutes.
