Ingredients

Adjust Servings:
500 g of Cucumber
1/2 bunch of Parsley leaves
1/2 bunch of Dill
500 ml of Coconut yogurt Or almond, or soy yogurt
250 ml of Mineral water
3 leaves of Chives
1 handful of Mint fresh
1 handful of Basil leaves
1 clove of Garlic
1/2 of lemon Lemon juice
2 tbsp. of Extra Virgin olive oil
to taste Salt
to taste Grounded black pepper

Hot? Can’t even think about cooking? Then this recipe will do the trick! Refreshing cucumber soup is a dish made in different cultures where it’s hot and there are cucumbers 🙂 The ingredients are usually similar, such as cucumbers, greens, kefir or yogurt, garlic and lemon juice. The soup and its preparation are much like a green smoothie. I guess that’s what an ancient green smoothie is 🙂

All ingredients should be from the fridge.
Wash all vegetables and greens well. Cut off the tails of the cucumbers. If their skins are too thick, peel them and cut them into large cubes. Place all ingredients in a food processor and grind until smooth. Then season them with salt, pepper and lemon juice to taste. You can serve the soup immediately or place it in the fridge for 30 minutes. Optionally, ice cubes can be added to the plate.
