It’s one of those recipes that can be made anywhere, anytime and will be super tasty, fast, healthy and fun! I often cook this version, for example, when we are on vacation and rent an apartment with limited culinary equipment. All you need is a frying pan, a knife, a spatula and the following products: chicken breast, olive oil, cherry tomatoes, garlic, onions, salt and pepper. The result will wow you!

Cut the chicken breast into several 2 or 3 flat slices of equal thickness. Sprinkle them with salt and pepper on all sides and saute them in olive oil. Then take them off the heat and put a lid on them to keep the chicken warm.

Cherry tomatoes need to be cut in half. Slice the garlic into thin slices. Dice the onion very finely.

Place a plate covered with a paper towel near the stove.
Heat the olive oil in a clean frying pan over medium heat. When the oil is hot, place the garlic slices and distribute them evenly. Saute them until they are golden. Here it's very important to keep an eye on them because you want to receive crispy, golden chips. If the garlic is undercooked, it will be soft, not crispy. If it gets too dark brown, it will be very bitter and smelly. If this happens, throw it away and start over.
Once the garlic is golden and crispy, take it out with a slotted spoon and spread it on a paper towel so that the excess oil is absorbed and the garlic chips remain crispy.

In the remaining garlic oil in the pan immediately put the onion and sauté it until soft. Now add the cherry tomatoes, salt and pepper and mix them well. Then, cover them with a lid and stew until the tomatoes become soft and begin to burst. After that, knead them a little with a spoon to get the consistency of a coarse sauce. Taste them and season with salt and pepper to taste. If the taste seems not too rich (it happens when the tomatoes are not sweet), you can add lemon juice or wine vinegar and sugar.
Place the chicken breasts on a plate to serve, spread the sauce on top and sprinkle with garlic chips.
