The cocktail was named after Giovanni Bellini, a Venetian painter of the 15th century. The cocktail itself was also invented in Venice, but much later, in the middle of the 20th century. So what does Giovanni Bellini have to do with it? Giovanni Bellini knew how to achieve the most delicate shades of pink in his paintings, for which he was known.
Let’s make a classic Bellini. It requires only ripe peaches with white pulp and a red center and Prosecco. Now you can find recipes with the addition of lemon juice and sugar syrup. This is just in case the peaches are not sweet enough.
