These cassava crepes are the closest relative of classic wheat crepes. They’re so thin and golden brown on both sides. They are suitable for most diets, though. For only gluten-free, you can use milk, for both gluten-free and dairy-free, use any plant-based milk, for paleo, use nut or coconut milk. 

These crepes store well, too. Cover them with plastic wrap, place in the fridge, and simply warm them up in the microwave before serving on the next day.

Whisk the eggs, add the milk, water, sugar, and salt. Mix.
Add ⅓ of the mixture to cassava flour, mix, and add the rest of flour. Mix into batter.
Use a hand mixer, if needed, or blend together at low speed in a blender.
Fry crepes per usual, greasing the pan with oil.
