Another healthy recipe today is Carrot Greens Pesto. We are used to carrots being sold at the store already without the tops and washed, but they actually have green tops with delicious and very healthy leaves. Carrot tops even surpass the healthy ingredients of the root vegetable, being rich in vitamins A and C, group B vitamins, minerals and antioxidants. So, that means don’t pass it by! If you have young carrots growing, or if you bought carrots with fresh tops, try making a sauce like this, pesto! I highly recommend it!
You can use it as a classic pesto and add it to vegetables, pasta, soup, or salads.

Grind all the ingredients in a food processor to the consistency of pesto sauce (paste of a coarse texture), season to taste with salt and olive oil. Store in the refrigerator for about a week. |
