Cashew cream cheese is already a classic in dairy-free cooking. With a powerful blender or food processor, it is so easy to make it. What’s more, let’s make it a cool thing by fermenting it with live bacteria! For this, you will need to add a probiotic to the cashews. It can be the contents of probiotic capsules that you take or special probiotics for vegan cheese and yogurt are sold (in that case, you don’t need to add lemon juice! If you don’t want to bother, just add lemon juice. Both options are good!

By making cashew cream cheese, you can use it for either sweet desserts or creams, etc., or season with salt, herbs, nutritional yeast and dried onions for a great sandwich topping!

Soak the cashews overnight in clean water at room temperature.
In the morning, drain the water and rinse the nuts. Place the cashews in a powerful blender or food processor and grind them to a smooth paste.
Put the mass in a glass or ceramic container, add probiotic, cover with a clean cloth and leave to ferment at room temperature for about 12 to18 hours (possibly longer, depending on the temperature in the room). It should produce a pleasant sour aroma and the taste will become slightly sour.
Or you can immediately add lemon juice to taste.

To make a paste for sandwiches, add salt, nutritional yeast, herbs and onions to taste.
