1 pcs Onion
4 pcs Potatoes
3 cloves Garlic
1500 ml Vegetable stock or chicken
200 g Chorizo
to taste Salt
2 tbsp Sunflower oil or olive oil
to taste Grounded black pepper

Caldo verde (Portuguese “green soup”) is a popular soup in Portuguese cuisine. This vegetable soup is a great idea for winter. It’s so rich in flavor and very easy to make. The ingredients include cabbage (or kale), potatoes, onion, garlic, and chorizo. In this soup, potatoes are mashed to produce a thick and smooth texture. Chorizo sausages add a spicy note and unique taste but are optional.

P.S. For vegan and vegetarian version just omit sausages.

Cut the onion into small cubes; finely chop the garlic; chop the cabbage. Peel and dice the potatoes. Cut the chorizo into 5 mm thick chunks.

In a pot, heat olive oil. Add the onion and garlic. Cook over low heat for 10 min or until soft. Add the potatoes, stir and cook for 5 min.

Add the stock, season with salt. Increase the heat, bring to a boil, then simmer for 10 min.

Meanwhile, fry the chorizo in olive oil until brown.

Mash the potatoes a little. Add the cabbage and cook for 5 min until soft.

Mash the potatoes into smooth puree. Add the chorizo, season with salt and pepper.
Serve hot.
