This is a classic of Austrian baking. In Vienna, people first wait for the apricot blossoms in the Wachau valley and go to see them. Then they wait for the harvest, and as soon as the first apricots appear, Marillenkuchen season begins. It’s baked at home and for celebrations, and at the Wachau food and wine festival, they bake the longest Marillenkuchen in Austria.⁠

This is a simple cake to make, but it’s beautiful and delicious. The sweet, crumbly dough pairs wonderfully with the tart, fruity taste of the apricots, and the cake itself looks bright and cheerful.⁠

Invisible Apple Cake is a recipe that originated in France and quickly became popular on the Internet. Its uniqueness lies in the large amount of apples sliced into paper-thin pieces and the minimal amount of batter. Hence the name “Invisible Cake”: there is so little batter that it seems as if the cake is made entirely of apples.⁠

In terms of texture, this cake is somewhere between an apple clafoutis, a very delicate charlotte, and baked apples with vanilla custard. The texture is not dense but soft and tender, almost like a pudding, so do not expect a traditional cake.⁠

This idea came to us during one of our trips when we bought ready-made roasted poultry breast and used it to make sandwiches on whole-grain gluten-free bread, spreading it with cream cheese (or mayonnaise) and adding lettuce and vegetables. The result was a delicious, healthy, and satisfying breakfast that could be assembled very quickly. After returning home, I experimented with different ways of roasting the meat until I achieved the same juicy and flavorful result, but without the preservatives and flavor enhancers commonly found in store-bought versions. Everyone enjoys these sandwiches! They also make a great school snack. Highly recommended!⁠
