300 g fresh or frozen strawberries

Directions
The classic topping for panna cotta is strawberry sauce. Its sour-sweet and fresh flavor enhance soft and creamy flavor of panna cotta and its bright red color balances the milkiness of the dessert.
Strawberry sauce is very quick to make. You can use fresh strawberries in summer, and frozen in winter.

Place the hulled strawberries in a bowl. If you use frozen strawberries, don’t thaw them. |

Add sugar and lemon juice. Place over low heat. The strawberries will release a lot of juices. The more they heat, the more juices release so we need to maintain the heat. Bring to a boil. Remove from heat. |

Cool to room temperature. |

Using a hand mixer, blend the strawberries until smooth.

Press the strawberries through a fine mesh sieve to discard the seeds. How to serve: Spoon the cooled sauce over panna cotta right before serving. Or you may serve panna cotta in strawberry soup: pour the soup in a soup plate and place panna cotta in the center. Garnish with baby peppermint leaves and berries. How to keep: Keep refrigerated in a glass container up to 5 days. |
