Directions
It’s an interesting version of Swedish balls, white with cardamom flavor and almond nut butter. Semmelbollar means “balls or buns.” Semmel is a white, soft, unsweetened bun. So the balls get their name from being white, soft and not too sweet inside.
An even healthier option is to put ground dates or dried apricots in the dough instead of powdered sugar. You can roll them in sesame seeds or chopped nuts. In this case, make the balls sweeter on the inside.

Grind the whole cardamom in a coffee grinder or mortar. You can take 1/2 tsp. of ground cardamom, but freshly ground the whole cardamom is much more fragrant. |

Mix all the ingredients in a food processor or with a spoon until smooth. If the dough is too soft, put it in the refrigerator before rolling the balls. |

Roll the dough into balls and sprinkle them liberally with powdered sugar. |
