Directions
Crumble is a sweet dessert that contains stewed fruit and berries topped with a sweet crumbly mixture. It’s baked in an oven until the topping is crisp. The perfect combination.
Classic crumble is made with apples but it can be made with any berries and fruits.
Crumbles can be gluten-free, too. I already published an apple crumble recipe. Today we’re making a summer variation with peaches topped with a crumbly almond mixture. For this, we will use ground almond rather than almond flour because we need a crispy bite! There’s very little flour in this recipe. Use any kind of flour to your taste: rice, sorgo, or wheat one.
I don’t stew peaches; I place fresh ones in a baking dish and add some starch to thicken excess liquid.
It’s quick, simple and delicious!

Place all the dry ingredients for the crumble (except for almond flakes) in a large bowl. Add the softened coconut oil and rub it in with your fingertips until the mixture resembles coarse breadcrumbs. Add 1-2 tsp cool water so the ingredients stick together better. Set aside. |

Preheat the oven to 180 degrees. |

Peel and core the peaches. If you use nectarines, you can leave skins on. Cut into 5-8 mm thick wedges. Place them in a baking dish. |

Combine together the starch, sugar, and ground almond. Sprinkle this mixture over the peaches. Or add the peaches to this mixture and mix until well-coated. Then arrange them in a baking dish. |

Sprinkle the crumble over the top to cover them completely. Sprinkle the almond flakes on top. |

Bake in the preheated oven at 180 degrees for 40 min. If the flakes start to burn, cover with foil. |

Let cool for 10 min before serving. The crumble will set and become crispy. |
