3 tbsp. of Extra Virgin olive oil
2 tbsp. of Apple vinegar
1 clove of Garlic

A dish like this is most often found under the name Heart Hoe, referring to the motifs of Korean cuisine. I’m uncertain if this dish is an authentic Korean recipe or a variation of one, but that does not diminish its value. It’s a very healthy and delicious appetizer made of boiled heart. I’m using pork heart in this recipe here, but you can also use beef heart.

It’s a very easy to make, delicious, healthy and very festive dish!

Boil the heart in advance and let it cool. Then, cut it into strips.

Cut the carrots into thin strips or grate them on a special grater. Slice the onions into thin half-rings. Finally, chop the parsley into medium-sized pieces.

To make the marinade, combine vinegar and olive oil in a separate bowl. Finely chop the garlic and fresh chili after removing the seeds and membranes. Grind the coriander seeds in a mortar. Add all the spices, salt and black pepper to the marinade and mix it well.

Place the heart and vegetables in a bowl. Pour the marinade over them and mix well. Let the dish sit at room temperature for 30 minutes. Then, either serve it or store it in the fridge.
