Cut the herring fillets into slices that are 1 to 1.5 cm thick. Dice the apple, leaving the skin on, into small cubes. Likewise, chop the onion and pickles into small cubes.

For the dressing, combine mayonnaise, a neutral-flavored vegetable yogurt (like soy or almond, or you can stick with classic sour cream) and sweet curry powder.

Combine the ingredients with the dressing and give it a taste test. Usually, you won't need to add any salt or other seasonings because the main ingredients and curry powder are already full of flavor. If you feel it needs a little something extra, you can adjust it with apple cider vinegar, honey, mustard and salt.
Let it chill in the fridge for about 8 hours to marinate.
Serve it as a topping on an open-faced sandwich or a standalone appetizer. You can also add a finishing touch with fresh herbs, a hard-boiled egg, or pickled red onions.
